A Short & Simple Week in the Kitchen 🇲🇽

This week’s menu was short and simple! It feels like I’ve been cooking nonstop lately, so making just seven recipes felt like a break.

All the recipes came from different creators this time, which made it extra fun to mix things up. Since I was in Mexico for most of the week, I leaned into Mexican recipes, trying out some new flavors. But once I got home, I made an amazing Indian butter chicken that’s officially going into my lunch rotation for the long run! 🍛✨

Finally!! I found an Indian chicken recipe that I can make at home and truly love. Even better, H loved it too! I’ll be pairing this with homemade naan soon.

Salsa Estilo Guacamole (Guacamole-Style Salsa) from Cocina Sana con Pizca de Sabor [Cookbook] 🥑

I whipped this up quickly to serve with quesa-tacos, and it was such a great addition!

Fideo Seco a los Tres Chiles (Three Chile Fideo Seco) from Mesa Sana [Cookbook]🌶️

Spicy and absolutely delicious! I’m definitely making this again. I made it as a “snack” before dinner with friends, and we kept picking at it. The spicy kick balanced perfectly with some dairy to cool it down.

A super quick recipe, and they turned out to be great pre-run snacks.

Gelatina de Tamarindo (Tamarind Jello) from Cocina y Gozar 🍮

Really sweet, so I might cut back on the sugar next time, but I loved the tamarind flavor in this jello!
